“Cove Cake Design is a boutique cake design business whose ethos is to work personally with each client to create impeccable cakes that are a delicious treat to be enjoyed by our clients and their guests. I like to think of my cake style as one of modern elegance with a signature botanical flair. I work with ganache and fondant finishes and love adorning with either organic edible flowers or my handcrafted sugar flowers. Personalised touches such as customised lace details matching the bridal gown, or hand-painted monograms inspired by the stationery, lend individuality and interest to the design.”
1. WHAT ARE THE MOST INTERESTING CAKES YOU HAVE EVER DESIGNED?
Last year I had clients who wanted a light and ethereal cake for a wedding that was very sophisticated and elegant. I worked with wafer paper to create abstract ‘sails’ that floated from the cake. It was essentially simple but hugely effective and I loved it!
2. WHAT WOULD BE THE MOST INTERESTING CONCEPT THAT A CLIENT CAME TO YOU WITH FOR A WEDDING CAKE?
One of the most exciting concepts that I am currently working on is for a series of cakes over the course of the wedding event, starting with a sophisticated cake for the rehearsal dinner, followed by a beautiful conceptual cake for the wedding day itself, and ending with a casual boozy cake for the after-party. I love how each part of the event is being marked with a unique and complementary cake design!
3. WHAT ARE THE MOST INTERESTING FLAVOUR COMBINATIONS YOU HAVE USED IN A CAKE?
Flavour is what I consider to be the most important aspect of a wedding or celebration cake. I like to think of the cake as an experience for clients and their guests, starting as an artistic feature that captures attention and ending with a delicious slice of cake that is shared in the celebration of the day.
I have an array of interesting flavours but the most popular are Chocolate Orange Olive Oil, Hazelnut Rosemary, Prosecco, Peach, and Thyme. Clients love having the choice of something a little bit different but that also has widespread appeal to guests.
4. HAVE YOU ANY TIPS AND ADVICE YOU WOULD LIKE TO SHARE FOR UPCOMING BRIDES OR FOR THOSE WHO ARE LOOKING TO DESIGN A CAKE FOR A SPECIAL CELEBRATION?
My top tips to anyone looking for a wedding or celebration cake are:
1: Use the expertise of your cake designer. It may be tempting to find an image of a cake you like on the internet and ask for a replica, but you will get something much more unique if you furnish your cake designer with details of your event that they can use as inspiration to fuel their creativity. I can guarantee that it will excite them more and you will reap the benefits!
2: From the start of the planning process consider how you can maximise the cake with positioning and styling at the event…don’t put the cake in the corner! Engage the expertise of your cake designer, event planner and florist to discuss potential options. From antique tables or perspex display pillars to floral clouds, the possibilities are endless!
3: Don’t forget to convey those delicious flavours to guests. Work with your stationer to add the cake flavours to the menu, or create cake menu or flavour cards to display on the cake table when serving the cake.”
